The sed command's plain scalar had an unquoted colon ("s/^version:
.*/version: ...") which YAML parsed as an attempted mapping key,
breaking the whole file. Wrap it in a block scalar instead -- same
class of bug as roles/forgejo/tasks/config/oauth2.yml's earlier fix.

Confirmed via yaml.safe_load: the file failed to parse before this
fix and parses cleanly after.
