On a dockge_stacks item:

  - name: some_stack
    source: local
    local_path: /path/to/stack/docker-compose
    directories_list:
        - path: /path/to/dir1
          owner: someowner_or_id
          group: somegroup_or_id
        - path: /path/to/dir2
          owner: someowner_or_id 
          group: somegroup_or_id

The directories_list variables is processed by creating all required directories on the host with the right ownership so that the stacks can access them.
